數顯白度儀比較不同磨用小麥細度與面粉白度值關系

   用不同品質的小麥制出的面粉數顯白度儀測定其白度值有所不同,總的表現是:若小麥的軟硬質接近,則用白麥制出粉的白度值比紅麥制出粉的白度值高,在紅、白麥數字相近的小麥,則軟質小麥制出的粉比硬質小麥制出的粉白度值高,說明小麥的粉的白度與硬度之間存在一定的數值關系。
  
      用數顯白度儀檢驗面粉質量的具體情況主要是關于磨用小麥品質與白度測定儀數值的關系分析,其簡單介紹如下:
  顆粒較粗的面粉比顆粒較細的面粉的白度值顯然下降,同一品質的面粉其粒度愈細者,白度測定儀對其白度值越大。反之則相反?紤]其原因主要是由于顆粒粗的面粉表面光線亂反射,形成陰暗的投影所致。為此曾用同一面粉而將其顆粒碾成不同粗細度的各種粉,然后進行白度測定儀測定,其結果充分說明了這個規律。
  
     用數顯白度儀檢查面粉的白度代替打粉板法來檢查面粉灼質量,需要解決好以下三個問題。
  1.小麥搭配比例應穩定不變。即相同質量的小麥制出的面粉其白度值才可進行比較。
  2.對組成某種粉型所選定的碾磨方法應穩定不變。
  3.面粉的粒度不應變化太大,也就是面粉的粗細度應保持在一定的范圍。
  
     應用數顯白度儀檢查面粉質盤具體方法的探討:將一定數是的面粉盛入裝樣盒內,使其表面形成平百,用白度測定儀測出的白度值即直接來判斷面粉的質量,根據經驗是不夠確切的,而應將其各種影響白度值的因素給予考慮進去較為合適。同樣的其他一些實驗室儀器在使用過程中為了提高試驗數據的準確性一般都會做好各方面的因素分析。
